I recently (2 weeks ago) purchased the Nord N200 5G Unlocked.
Right from the first use, after the first initial charging, the battery runs out extremely fast.
On average, it runs out within 2 hours of use. Something doesn't make sense as it is a brand-new device!.
I haven't done any special settings adjustments upon setup so I am thinking maybe it is a matter of specific battery setting that needs to be set.
I don't run many apps simultaneously and even when I do they would be light ones, like Google Podcasts, TuneIn, SoundClub and so forth.
Do you know something about this issue and has anyone else experienced the same?

When you buy a new phone, it's important to charge it fully the first few days of ownership to get the battery running properly. The reason why it's dying within two hours of use is because the cell has been sitting idle for who knows how long and any sort of intensive use (regardless if it actually is intensive or not) will make it drain rapidly. This is common with all LiPo-powered devices and easily fixable.

Could you also post a screenshot of battery usage, running apps and services?

In the first days your phone is learning your usage scenarios.

So how is it fixable then?
So you are saying I need to let it charge fully (100%) for several days and it will be resolved?

Essentially, yes. Keep it on the charger overnight once in awhile too. This does not damage the battery at any point and can beneficial.
