The stock one works best in my experience.
I tried Gcam and depending on the scene, sometimes it comes out better, others it's worse.
and it was buggy AF so not worth it.

In my opinion, a camera loses a lot of its utility if you have to decide which app to use while trying to capture a moment! it has to be quick!

as I said, I think the default app produces quite decent pictures. and for the moments when I have time and want to be artistic then the pro mode is perfect for those.

There are lots of instructions online if you just Google phone photography.
but basically I use it to set a low ISO (induces noise to enhance scene brightness), and higher shutter opening times . this way I get to use steady hands or a tripod to take amazing pictures at low light with no noise.
it can also be used to produce artistic effects like this:

original scene, nice but boring sunset from the kitchen window:

now how about I lower the ISO and put a fast shutter speed to make it darker, and at the same time mess with the Color temperature to make it look like a sunrise on an alien planet?

or make it an extra dramatic sunset by making the Color temperature warmer?

maybe decrease the shutter speed a bit to make it brighter?

you can also control the focus in order to produce actual lense blur instead of that cheap portrait crap you get with software.
or RAW file capture which I don't even know how to do properly xD

just open the pro mode, experiment and have fun ;)
