I've downloaded and installed the latest Gcam apk on my OnePlus 5T, but when I open the Gcam app I am notified with this message "camera keeps stopping".
Is there any setting I need to do?

Anyone have experience with gcam on Android 10 beta? Some versions are okay, some are laggy..it takes forever to process hdr+ photos, not to mention photo sphere not working...don't know if I should roll back to Android Pie or is there some solution to get gcam working properly on Android 10 beta..

And there is a new versio of beta app. It works also fine.
Use this method always when you install the app.
    1. Go Settings- Apps
    2. Force quit the app
    3. Clear storage
    4. Uninstall the old app
    5. Install the new app
    6. Reboot your phone
    7. Use your new app and take a photo

I've downloaded the link you provided on my 5T, the back camera is all good however the front camera pictures are having purple lines as per attached picture. Could you suggest me a solution?

Maybe it isn't compatible with 5T because there's no config file for that model?
But you can try to change the front camera mode. In Camera app More-settings-front camera- try Nexus 5 or 6
