If you're wondering about the Wi-Fi selection / data counter / battery info, long press the quick setting. Just need a bit of getting used to the new workflow.
Other than that there's nothing different from the old quick setting.

Regarding the color, personally I've used to dark theme and accent colors from previous version, so I don't mind that much.
On usage side though, I understand the hassle. Previous version have a bit more personal touch to it. Though frankly, I don't think it matter much.
Choosing Wi-Fi channel for example, previously a single tap would bring you to Wi-Fi selection as opposed to long press now. But you have to expand the quick setting twice, whereas now you can long tap directly without expanding quick setting the second time. So overall, just a different way of using, not that much more or less of a hassle.
One thing I like from the new quick setting is that they give you more column both on the first and second expand, showing more to use.

    Accent colours on default theme.

blue on dark is ugly as you know what.

stock pixel look is so much better. (dark grey on white).

    why OnePlus?

On top of this change they even removed the network indicator..e.g. "x" "!" when your network is not working and even the up & down indicator which shows the network activity. These are very good to know the status..and now its gone.
@Adam Krisko I am talking to you man.

what do you mean by "more cool"?
The colour theme and icon design are the same, just smaller.
    Is there something I missed?

Design team from OnePlus is come from 2011 where holo theme and bold font is the trend.

Look at those Honeycomb color theme and Jelly Bean ambient display.

Not to mention the removal of the quick setting in the notification, now I need to open the setting app to even change wifi network.

    Thanks UX/UI team.

The color theme is changed, it used to be white icon on dark background, now it is Honeycomb blue on dark background

The design of OxygenOS is going further away from stock design every time it updates
