Warp-Quick, Easy, Classy, Tasty Seafood Pasta:

An inexpensive dish that satisfies the eyes, stomach and soul.....and takes only 20 minutes from stove to table!!!! Now that's what I call Warp Speed goodness!

    Ingredients:

    • One package of linguini pasta
    • 3 Tablespoons of capers
    • One 2-oz tin anchovies in oil
    • 1/4 cup of diced shallots
    • 4 cloves of diced garlic
    • Two 5-oz cans of tuna OR One 15-oz cans of cooked salmon (your preference... either work well, but I prefer salmon)
    Preparation:

    1. Cook pasta al dente, save one cup of the pasta water and drain rest. Set to side.
    2. In separate pan, saute garlic, shallots, anchovies in oil and capers. Saute for about 30 seconds.
    3. Slowly add cup of pasta water and cook down a bit (about a minute or two).
    4. Add pasta back to this pan and stir to coat.
    5. Drain your can of tuna (or salmon). Stir to mix into pasta, but keep it somewhat chunky.

    Serve immediately with arugula salad.
    Yum!!

    Chickpea Wraps
    Ingredients (4 servings):

    Wraps:

    • 2 teaspoons canola/olive oil
    • 1 small onion, chopped
    • 1 tablespoon minced ginger
    • 2 garlic cloves, minced
    • 1/2 teaspoon curry powder
    • 1/4 teaspoon salt
    • 1/4 teaspoon coriander powder
    • 1/4 teaspoon cumin powder
    • 1/4 teaspoon cayenne pepper (if you want it to be spicy)
    • 400 grams (~15 ounces) chickpeas, rinsed and drained
    • 1 cup diced tomatoes
    • 3 cups fresh baby spinach
    • 4 whole-wheat tortillas, warmed
    Raita:
    • 1 cup reduced-fat plain yogurt
    • 1/4 teaspoon salt
    • 1/4 teaspoon cumin powder
    • 1/2 cup fruit tidbits (mango, pineapple, apples, cucumber) or mint
Raita is an Indian condiment made with yogurt, to round off any meal. For my friends who are unsure about this, Wikipedia describes it as - The closest approximation in western cuisine is a side dish or dip, or a cooked salad.

    Procedure:

    Raita:

    1. For raita (pineapple raita in this case), mix the mentioned ingredients. Yeah, as simple as that.

    Wraps:

    1. In a large nonstick pan, heat oil over medium-high heat;
    2. Saute onion until tender.
    3. Add ginger, garlic, and seasonings. Then cook and stir until fragrant (~1 minute).
    4. Stir in chickpeas and tomatoes; bring to a boil.
    5. Reduce the heat; simmer, uncovered, until slightly thickened. Continue for 5-8 minutes while stirring occasionally.
    6. To serve, place spinach and chickpea mixture on tortillas. Top it up with a lil' bit of raita and nom-nom.
    7. Bon Appétit!
@YRJ Thanks for organizing such a cool contest in times like these.

    Happy cooking, everyone!
