    So I made this a couple days back but didn't get the chance to post until now hehe.
    I made Pesto Alla Genovese w/ Sundried Tomatoes.

    Ingredients required:
    1. 100g of Pasta (of your choice)
    2. 5g Olive Oil
    3. 2 whole Sundried Tomatoes
    4. 30g Basil Pesto (I made my own, you can too.. or just use storebought)
    5. About 15g of Parmigiano-Reggiano (very important to try and get the best possible. The one I'm using is a DOP that's been aged for 30 months!)
    6. 7g Sea Salt
    7. (not pictured) Small spoon of Lemon Juice
    8. (not pictured) Fresh Basil for Garnish

    Before I jump in, just look how chunky and magnificent that homemade Pesto is (if you'd like to know how I made it feel free to ask)

    Process:
    1. Set your stove to the highest setting and get about a 1/3 filled pot of water boiling (it has to be a rolling boil)
    2. Once it reaches a rolling boil, add in your salt and then your pasta and sundried tomatoes (this is so the sundried tomatoes can rehydrate)

    3. Cook Pasta and Sundried Tomatoes according to manufacturers instructions, mine took around 9 minutes to reach Al Dente. (Just cooked enough so you have enough of a bite, pictured below)

    4. Drain your pasta and tomatoes
    5. Carefully place your hot pasta in a bowl and mix in the pesto and the drizzle of olive oil. Leave tomatoes in the colander until everything is mixed
    6. Carefully cut up tomatoes into small pieces over the pasta and spread them evenly
    7. Sprinkle in the Lemon Juice
    8. Important: Grate a ton of Parmesan over your pasta
    9. Tear up some fresh basil to garnish over the pasta
    10. ENJOY YOUR FOOD!

    This takes about 15-20 minutes start to finish, so it's super simple and gets you an absolutely delicious bowl of food in faster than WARP time/speed! Here's the plated up bowl of my pasta:

    As you can see, the bowl of pasta didn't survive for long :p

    Get Started

    

    Dahi Bhalla (Dahi Vada)

    This is a delicious North Indian style recipe made with deep fried urad dal dumplings and immersed in a tangy sweet and sour curd mixture and topped with dates and tamarind chutney.

    Kumkum Chatterjee

    Ingredients

    1 cup urad dal

    2 tbsp moong dal

    2 cups curd

    1 small bowl sweet tamarind chutney

    1 tsp chaat masala

    1 tbsp roasted ground cumin

    To taste sugar

    1 tsp red chilli powder

    To taste salt

    1/2 tsp baking powder

    1 1/2 cup oil for frying

    1 tbsp chopped coriander




    Soak urad dal and moongdal overnight in warm water.Next morning discard water and grind the dal with little salt and baking powder to form a thick batter.Beat the batter thoroughly till light and fluffy.Check fluffiness by immersing little batter in water.It should float on top immediately.





    Heat oil in a wok and fry dumplings over medium heat till golden brown.







    Take a bowl of little salted warm water and immerse the dumplings in it for sometime to get super soft vada.





    Squeeze out water from dumplings and arrange them in a serving bowl.





    Strain thick curd to get a smooth texture. Add chaat masala,pinch of salt,sugar,roasted cumin powder and tamarind chutney and mix all.Pour this over dumplings.To make tamarind chutney boil dates and tamarind paste with roasted cumin powde r,salt and sugar to taste.Add a pinch of red chilli powder.







    Sprinkle roasted jeera powder,chaat masala,little red chilli powder;tamarind chutney and garnish with chopped coriander.Serve chilled.

    Thanks haha, I really love Italian food (both eating and cooking it) so I try to stick close to classic but add a little spin to it.

    Actually made pasta today for lunch too. Very simple al pomodoro [e]1f60a[/e] This was super classic with just tomatoes, salt, pepper, garlic, olive oil, parmesan and basil to top it off!

    a little secret: in the pasta with only the sauce and the basil try to put the pecorino romano (this cheese has a stronger and more salty taste) instead of the parmesan

    I thought you meant only pecorino, basil and pepper in the sauce [e]1f602[/e] didn't see that you quoted my post 🤣 I know what Cacio e Pepe is, it's hard not to know when the only Ingredients are in the name 😋
