Yeah. Ofcource not all AAC. But I have seen a slightly higher flaw rate of that codec. Odd brands and TWS especially and so on. Some had to disable AAC to make them work.
My car uses SBC. My headphones LDAC (2x Sony, not TWS. Haven't found a worthy kind. Tested with multiple codec) and my headphone DAC Aptx (though I only use wired).
For those with issues if they haven't done so yet and the issue remains for them they should report it via the feedback tool.

I have som cheap buds, that work ok, but my noise cancelling plantronic headphones only works with phone calls, not audio from streaming services.

I have tried disabling the AptX, but it is still the same.

There are a lot of AptX headphones and buds out there, so even if it is only AptX enabled ones, the problem is plenty big.

Still this applies. I have not read about a easy quickfix.

It seems to be a common issue for people that have upgraded from 10. But it has happened on 10 users too.
Known issue from beta. Might not even be a Oneplus issue but perhaps a Google issue.

    Or simply

Aurora Store or manual updates via apkmirror until it's fixed.
    https://auroraoss.com

Most needed a factory reset to solve this permanently. But even that might not be a 100% solution (backups might affect the end result - so a clean install might fix it better).
Barely never happens for me (wiped at Developer Preview 3). And if it does I would use Aurora Store.

I never said all Aptx. Nor all AAC. It's more isolated cases for some hardware. From what read (beyond Bluetooth profile issues) AAC seemed slightly more troublesome.

Do they respond with anything if you report it? (with detailed info and logs when connected to the gear)

In my cases it's Sony WI-1000X (LDAC and Aptx HD) and WI-1000XM2 (LDAC and AAC) and Chord HUGO (regular Aptx) I have tested other than my car (SBC). They all work fine on all codec (very small test of AAC though)
But when using AAC I get this. I guess that mean there is limited support or something (atleast on my particular gear).

When I messed around with Lineage OS the dev for my device had some Bluetooth issues too. Limited to some cars and some types of headsets. Even then there was talk about profile issues and not just codecs. So I hope Oneplus gets enough reports and logs on the problematic gear.

Welp look at all the crybabies who complained how Oneplus is cheating their feelings because they are probably not gonna release OB3 just literally a day before. And even now when OB3 is released there are still streams of dissent without any credit given to them. I know it's their obligation to roll out updates, but please be a bit respectful and patient sometimes lol smh
