I was running CM14.1 on my OP3 till a few hours back when the Nougat beta launched. I wanted to go back to stock recovery so I flashed it via fastboot, I also locked the bootloader. After I did this the phone didn't boot into recovery anymore

I tried flashing TWRP and unlocking the bootloader again but nothing seems to work, does somebody know what to do? :)

The mistake you did was to flash the stock recovery. You were most likely using modded TWRP that works fine with OOS and doesn't go down.

Fix : go to fastboot, connect to your pc and type in terminal/cmd : fastboot flash recovery <path to twrp>.

Then press volume down and go to recovery. TWRP will be installed. Install nougat Beta using that.

If you do find one, tell me. Currently, I can't after multiple tries.

Then again, TWRP is pretty awesome. So I have no issues.
