Are you using the default Google Dialler that came with the phone or a sideloaded OnePlus Dialler which can have these issues ?

Check on the Playstore to see if there is an update for the Google Phone. If not, you may have to reset the phone app by clearing both App info Cache and App info Storage as well. To see if that will rectify it. It will clear all saved recent calls, but if you have Google backup to backup recent calls enabled it may restore them.

In the recent section click on the contact name, not the profile next to it, the name itself, and select history. You should see all calls you've had/made with that contact. I can go all the way back to 2019 for some contacts that way
