Have you set a password before in TWRP?

Yes, there was a pattern password :(

Anyway, I solved installing a different version of TWRP and than, flash again OOS and root, wipe cache, reboot.

Now it's working, but... I've no root.

So I tried to reboot in recovery mode, but it now reboot on Oneplus recovery mode... Not the twrp..

How can I have again the already installed twrp?
And also, I see that rebooting the phone, it shows me 2 times the dm verity page..

That just shouldn't happen. Try flashing OOS again and then a custom kernel, then root. Try rebooting again after that.

Before to start, I checked my config and I see that the phone is "encrypted", is it normal? Should I do something before to do your suggested steps?

And also, is it better to remove pin or pattern before to do everything?

As long as you know the pin/pattern you're fine. As long as you're staying on OxygenOS you can stay encrypted.

I flashed TWRP with fastboot, than reinstalled oos->wipe cache and dalvik -> than flash root supersu -> thank wipe cache and dalvik -> thank reboot..

The root seems now applied correctly, but i still have the 2 times the dm verity page..what could cause this?

Search DM Verity Check fix or something along those lines. Google is a powerful tool at the disposal of your fingertips.

I removed the dm verity message by flashing an old firmware image(OxygenOs 4.0.2) from twrp. Then rebooting to fastboot. From pc, cmd, fastboot oem disable_dm_verity, fastboot oem enable_dm_verity. Reboot to twrp, flash firmware of your current OxygenOS. I'm talking about only the firmware files not the entire rom, you can find the files on xda.
